Elena Espinal passed away peacefully on May 20, 2026, at the age of 91. Born on March 6, 1935, in Honduras to Lino Diaz and Elena Hernandez, she devoted her life to caring for her family and creating a home filled with love, warmth, and togetherness.

She found great joy in cooking and baking, and nothing made her happier than gathering loved ones around the table to share one of her unforgettable meals. She enjoyed embroidery, gardening, shopping, and caring for her many beloved houseplants, which made her home feel especially cozy and welcoming.

She cherished traveling back to Honduras to visit her son, extended family, and dear friends, and enjoyed spending time in Massachusetts surrounded by the family she loved so deeply. Some of her happiest moments were spent sharing “cafecito” and heartfelt conversations with her granddaughters at La Madeleine.

She also enjoyed watching movies and shows, especially Emily in Paris, often clapping excitedly during her favorite moments. Quiet afternoons reading classic novels and the Holy Bible were another source of comfort and peace.

Cooking was one of the many ways she showed her love. She loved preparing meals alongside her children and took pride in seeing the recipes, traditions, and talents she passed down continue through her family.

One of her greatest joys in life was spending time with her great-grandchildren, a joy that kept her active and closely present in their lives.

Her gentle spirit, unwavering love, and nurturing heart touched everyone who knew her. She had a rare gift for making every place feel like home, and her family and friends often described her as the easiest person to love. She was the heart of her family, a beloved matriarch whose presence will be deeply missed and forever cherished.

She is survived by her eight children: Manuel Espinal (Martha Espinal), Carmen Hernandez (Denis Hernandez), Alfredo Espinal, Xiomara Reyes (Luis Reyes), Nestor Espinal (Lady Espinal), Roney Espinal (Gisela Espinal), Zulema Santos (Samuel Santos), and Rommel Espinal (Stephanie Espinal).

She is also survived by her 24 grandchildren, 34 great-grandchildren, 7 great-great-grandchildren, and her siblings Sandra and Oscar.

She is preceded in death by: her parents, Lino Diaz and Elena Hernandez; her husband of 52 years, Alfredo Espinal; and her siblings Alicia, Arnulfo, Julio, Jorge, Luis, and Omar.

The family extends its deepest gratitude to her caregivers, Dr. Jeryl Breaux and Dr. Burke Brooks, and especially to her primary caretaker and beloved granddaughter, Lilibeth Espinal, who remained by her side with love and devotion.

Relatives and friends are invited to attend the Funeral Service at 11:00 a.m. on Saturday, May 30, 2026, at Resthaven Funeral Home, 11817 Jefferson Highway, Baton Rouge, Louisiana. A visitation will be held at the funeral home beginning at 9:30 a.m.
